Friday, February 14

3:00   Check In at the Blue Juniper Inn

4:00   Welcome and Introduction of Chef Hannah Holland, by John McCann

Afternoon champagne and charcuterie board

Preview of the weekend, menu items, getting started

5:00   Prepare opening dinner (citrus poached fish, quinoa salad, sourdough loafs)

            Prep cinnamon rolls for Saturday morning

6:30   Opening shared dinner (with white and red wine pairings)

Saturday, February 15

7:00   Warm cinnamon rolls with coffee and tea

8:00   BREAKFAST, continental

10:00 Prep focaccia bread for lunch

11:00 Prepare lunch: Mortadella sandwich (Anthony Bourdain’s favorite!) and Butternut Squash Soup

12:30 LUNCH, then free afternoon

4:00   Prepare dinner: Carolina Caesar Salad, Beef Wellington, Potato Espuma, and Crème Brulee

6:30   DINNER (with white and red wine pairings)

 

Sunday, February 16

7:00 Madeleines with coffee and tea

9:00 Prepare breakfast: Eggs Benedict & ‘Tea Tasting’

10:30 BREAKFAST

11:30 Departure from Blue Juniper Inn

Details:

Three-day cooking class: $350 per couple (includes welcome gifts, all instruction, all food, wines, & Inner Banks Mercantile giftcard); lodging is an additional $159 to $219 per night.
